Purple Corn & Cuy

Surprised both of these items have yet to take off in the states. Both have interesting flavors and both are found all around town down here. Your standard purple corn is just that… purple and corn. But used to make chica morada or mazamorra morada, have yet to see any purple tortilla or cans of baby purple corn, but that would be pretty cool.

Then there is Cuy, the neat little pet Americans have grown to love that turns out to be an interesting treat. When cooked from a huatia, it roasts the animal quite a bit and gives the meat a rich smoky taste as well. The skin is quite tough and requires quite a bit of chewing, but then again, that’s were all the nutrients are.

Will write some time about anticuchos some time in the future as well. There are plenty of weekends left here.
